We'll need some more information..
1.) Linux Distro?
2.) iPod Touch version? Jailbroken/Not?
3.) What do you want to sync? Songs, videos, photos?

Yep follow that or just set up a dual boot of XP and Ubuntu and use XP for everything iPod, and give XP like 10GB :D

enter your password and let it install.
then open gtkpod applications, sound and video, gtkpod. click add folders. add your music folder. click on load ipod. drag the music from the local folders to your ipod. press save changes. click on the wire in gtkpod to eject your ipod.
