We'll need some more information..

1.) Linux Distro?

2.) iPod Touch version? Jailbroken/Not?

3.) What do you want to sync? Songs, videos, photos?

yes. goto terminal and type in sudo apt-get install gtkpod
enter your password and let it install.
then open gtkpod applications, sound and video, gtkpod. click add folders. add your music folder. click on load ipod. drag the music from the local folders to your ipod. press save changes. click on the wire in gtkpod to eject your ipod.

Once iSlsk comes out, you'll be able to dump the music with SSH.

Well the new one is different, it has all the songs on the iPod; even from /var/mobile/Media/Music. And I'm sure you'll be able to dump like you used to.
