Theres no included microphone.
So just use your bluetooth headset, and then connect a wired mic, doesnt that work?

Uh, yeah there are microphones included in the new ipods.

OK, For clarification purposes:
iPod Touch does NOT have a mic, the new nano does
You can NOT use a bluetooth mic on the touch
The only difference between the old and new touch is the new processor.

This is partially true, you can use the bluetooth mic but only for the 3g's voice control. And... The only difference between the old and new touch is the new processor is sorta wrong-->Voice control and Open GL (8gig has the old processor 2)
