Solutions So Far:
1600 Error: Put device into restore mode & NOT DFU mode when shift-installing custom firmware.
1604 Error: You cannot fix this with mac, get Bootcamp/Virtual Machine running and move your 3.1 custom firmware created with Pwnagetool to that OS. Then DFU restore to 3.0 in Windows using iTunes. Once at 3.0, Jailbreak with RedSn0w 0.8. Once jailbroken, Go into Restore mode on your iPod and Shift-Restore to the Custom Firmware you created on mac. Once done, go back to mac and re-sync your data. And your jailbroken!

Ok this is annoying me. I keep trying but I get another error.
The 1600 error is because you have to be in recovery mode, not dfu.
to get into recovery mode, hold down power and home until the ipod reboots and you see the apple logo. Let go of the power button, but keep holding down home until you see the "connect to itunes screen.
But after fixing that, You might get a 1604 error, like me.
A user on a different forum suggest that you should just option-restore to the custom firmware without going into any modes. I have not tested this and do not know if it works. Does not work, Gives Recovery mode.
1604 Solved, go to the top of this post.
Discuss.

Was your ipod preloaded with the 3.1.1 firmware?, if so pwnagetool does not support it.

I'm guessing it's my itunes, I can't DFU restore (1604 error) or regular restore. sad. I'm downgrading itunes tmrw. and yes I was prejailbroken.

The only way to JailBreak an iPod Touch 2G, Running 3.1.1 To date, is to create the Custom IPSW File on a Mac, and transfer it over to a Windows PC.
Then have the Jailbroken 3.0 Firmware on your iPod, And Shift+Click Restore while in Recovery mode to the custom IPSW File you made on the Mac.

This was posted on a different Thread.
I'm going to try this now.

I went straight from 3.0 jailbroken to 3.1.1 jailbroken.
And which version of iTunes do you have? iTunes 9 shouldn't be the problem, you might just need to re-install the current version.

so you went from your ipod being on 3.0 jailbroken to just restoring with the custom 3.1.1 firmware?
maybe thats my problem I restored while my ipod was in 3.1.1

Im pretty sure you have to be in a JB 3.0 before you can update to 3.1.1 custom? but if thats the case how do you do that on iTunes9?

1.Downgrade to 3.0
2.Jailbreak using Redsn0w
3.Go into recovery mod (NOT DFU MOD)
4.enjoy your 3.1.1 jailbroken ipod!!

I've read somwehere on the internetz that some people suggest cleaning out your iTunes firmware folders for the 2G downgrade and so presumably similar for the jailbreak... I'll see if I can dig up the links. It seems some have this issue and others don't so it's obviously an issue pertaining to your PC and/or software set up in some way.
I'm going to stick this thread here for now so discussion on these error codes can be focused here.
edit/ search on Google and there's plenty of entries on this - many suggest and report success with deleting the data in your iTunes folder (though keep the data in your recycle bin to 'restore' back to the iTunes folder later). Let me know if this works for anybody.

If anyone gets error 1601 on the 2G you can fix it by not going into dfu mode and just using shift and resotre to update to 3.1.1.

This is how I got it working, maybe it will help some of you too...
Instead of holding the home and power and blah blah to get it into DFU Mode, try this.
1. First make sure your iPod is disconnected from your computer.
2. Make sure your iPod is turned completely off (not just locked)
3. When you plug the USB Cable into your computer (be sure not to connect it through a dock, it has to be direct), also hold the home button at the same time.
4. Wait for the "Connect to iTunes" screen to come up to let go of your home button.
5. Your computer should say your iPod is now in recovery mode.
6. Shift+Restore to your custom firmware.
7. Wait for it to finish the jailbreak, and your done!
Sorry if someone already said this, but I just wanted to help some people out.
I was getting the 1601 error when trying to Restore the Firmware while on Recovery Mode. The solution to this was a simple Shift+Restore with the iPod connected in normal mode to iTunes.

It seems that a simple restore rather than a DFU restore is fixing many of these 16** iTunes connection problems...

So i downgraded my iTunes to 8.2.1, then restored to 3.0 firmware. After that I used redsn0w and jailbroke my ipodtouch 2G 3.0, Now im updating my itunes to 9 and then im going to restore to my custom 3.1.1.
This should make it work hopefully. Ill update soon.
