I bought an iBtune BH1000-6 from ebay. Its a Bluetooth transmitter for the iPod. Its got a dock connector and the cool thing is it supports the control protocol too! You can pause, skip and rewind.

Get any good BT headphones, clip this to the dock and off you go. Its got its own battery so you dont drain the iPod and when you turn it off it auto-pauses the ipod!
£20+post on ebay. I can confirm it works fine with the Touch.
