so i got given this iPhone by a friend and it's been jailbroken and unlocked so i can use any sim card.

There's a whole lot of crap on it and i want to start from scratch. now, if i was to use the restore button on iTunes to restore this iPhone will it still be unlocked? and if not can i easily unlock it again and jailbreak it?

I think he means that certain apps will need certain subsystems to work.

When you unlock and jailbreak it, I recommend downloading Jiggy Runtime, BSD Subsystem, and OpenSSH.
