I love the Touch but I don't like the heavy handed approach that Apple takes with controlling it. The biggest issues are:
1. The inability to direct access the Touch from my computer. You have to have iTunes open to access the Touch. By doing this they have blocked my ability to use any other software to load files: ie Winamp, windows explorer, etc.
2. No independent software add-ons until after Feb.
3. No games unless you have WiFi connection. I want to download games to play when I travel without having to hack my Touch.

I don't want to get locked out or have the system crash when Apple decides to "upgrade" their software. The Touch is a first generation device so I expect to get some bug fixes and other upgrades. I'm sure Apple will target programs like jail break in future "upgrades" just because they are such control freaks.

If you restore it before you update it, it should be fine.
