I think you're pretty much SOL unless you ask the rep, or until you open the box.

But, if i buy an iPhone and when i open the box i see 1.1.2 version, is it possible to downgrade it?

Yes. Shift + Restore, then choose the 1.1.1 file.

if i downgrade it to 1.1.1 or 1.0.2 can't i unlock it?
if the iphone came with the 1.1.2 software already installed out of the box then you can't unlock it

If i buy a 1.1.2 iphone with new bootloader and i can't unlock it (at the moment, i hope!), can i use it like an itouch or is it all locked?
Sorry for my noob questions

You can tell which firmware the phone has without opening the box. The way you can tell is by the serial number which is also located on the back of the phone AND on the back of the box in very fine-print lettering.
The serial number is broken down as follows:
1st two digits = Factory ID, i.e. where the iPhone was manufactured
3rd digit = year of production, i.e. 7 would be 2007
4th/5th digits = week of production, i.e. 39 would be week 39 (Sep. 24-28)
Example: 7R735
You'll want to get one that is prior to Week 45 when 1.1.2 was released. So anything Week 44 and under and you are fine. At least that's what this HoFo thread I am on states. Mine is a Week 40 that came with 1.1.1 out of the box.
